Today’s Google Doodle is a fun animated game for fans of spicy food.

Without the American chemist’s “Scoville organoleptic test” you wouldn’t have a way of measuring how hot chilli’s are.

But how did humanity learn how to measure the difference between a standard pepper and a blow-your-head-off Trinidad scorpion pepper?

It was only then that people came to know about how to measure the heat.

Different peppers have different heat levels depending on the concentration of a chemical compound called capsaicin that they have in them. This takes you to another scene where you see an ice-cream cone with three scoops (the player) and the pepper (player’s enemy) that Scoville just tried.

“This was a really rare chance to do a fighting-style game for a historical figure”, illustrator Olivia Huynh jokes.

January 22 would be the 151st birthday of Wilbur Scoville, the American pharmacist who devised the standard measurement of a pepper’s spiciness. He is perhaps best remembered for his organoleptic test, which uses human testers to measure pugency in peppers.

Today’s Google doodle gives you interesting trivia about chillis, and shows the scientist testing their heat after eating an ice cream. It is also to be noted that Google is written using the various chilli peppers.

The Doodle features a game that involves you firing ice cream at hot chillies to smother their threat. At the end of the game, the heat properties of the spices appear on the screen.
